The Key to Stress-Free Weeknight Cooking: One Pan, Zero Fuss

Sheet pan meals are the best thing to happen to healthy meal prep and we haven’t looked back since. It keeps cleanup to a minimum, and allows you to make a full, balanced meal — protein, vegetables and good fats — all at once. This speedy meal is ideal for a hectic weeknight or Sunday meal prep.

Recipe: 15-Minute Chicken and Veggie Sheet Pan

This is one of the best easy healthy meal prep recipes out there because it doesn’t involve much chopping and cooking takes no time.

Ingredients:
  • 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
  • 1 cup broccoli florets
  • 1 cup chopped bell peppers (any color)
  • 1/2 cup sliced red onion
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
Instructions:
  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the chicken and all vegetables with olive oil, Italian seasoning, salt, and pepper.
  3. Spread the mixture in a single layer on the prepared sheet pan.
  4. Bake for 15–20 minutes, or until the chicken is cooked through and the vegetables are tender-crisp.
  5. Divide into four containers for easy healthy meal prep.
